DB Bistro Moderne
Ever since I first laid eyes on pictures of their burgers in food reviews,
I knew this was a place I just had
Located at The Shoppes at Marina Bay Sands
, across the Theater on the Galleria level,DB Bistro Moderne
is a contemporary French-American restaurant,
where traditional French cuisine meets the flavors of the American market.
Think classic Western dishes, but with a elegant, delicious twist!
Service staff were polite and quick to jump to our service,
informing us of the daily off-the-menu specials, providing menu recommendations,
but - most importantly - adequate time for a 'virgin muncher', like me, to decide on my order.
Did I mention that they serve delicious, freshly-baked bread?
On its own, or with the provided butter, the fragrant items seem to escape the bread basket as quickly as it'd came.
But our waiter kindly helped us get another - of which, I shall not disclose how much we finished!
Menu items are not too extravagantly priced, with appetizers ranging from mid $10s - 20s,
and mains in the $30s - 40s (the exception of a the main Côte de Boeuf for Two
and desserts in the mid $10s.
Our waiter provided us with this special cheese puff bun, seeing how we fancied their bread basket.
With just the addition cheese and pepper, who knew a tiny, warm puff could be so good?Arugula Salad

Surprisingly, their salads do not taste very salad-y at all!
It isn't thick with that leafy, green taste familiar with salads, instead it boasts a whimsical fruit salad-like taste.
won us over with its refreshing cool mix of watermelon, mushrooms and creamy sesame dressing!Casserole Provencale
A huge bowl of mussels, clams, shrimp, sliced vegetables and bread in a Saffron broth.
There was a bit of shell going on with this dish, but everything was cooked to yummy perfection.
The resulting broth was sweet from the seafood, and oh-so flavorful.
And that's where the pieces of bread come in - to soak up the delicious broth!The Original db Burger
Yes, the famed sirloin burger, filled with braised short ribs and foie gras.
It may seem like a small burger, about the size of my whole palm,
but the patty was so thick, that I was quite full after this (till the dessert menu came along).
Though thick, the huge patty is tender and succulent, and falls apart easily.
I was quite impressed how this dish pulled itself together, with the various complex tastes melting into one.
It may not have blown me away, but this was definitely an experience.
PS. Did I mention how much I loved their French fries?
There was no truffle oil present, and I don't know if they used horse fats,
but their fries were simply so finger-licking good, especially with the provided condiments,
I had to fight my dining partner for the last few sticks!
And now, onto desserts!
Our full tummies were suddenly forgotten as the waiter placed in our hands the dessert menu..Coupe au Poire
A delightful and pretty concoction of fresh and confit pear, candied walnuts, Verbena tea foam and cassis-pear sorbet~
It may tie your tongue with all the ingredients, but it will surely make your taste buds dance!
This dessert was a wonderful mix of textures and flavors -
from the crunchy, sweet caramel cover to the soft, fresh and confit pear bits.
Am definitely having this again the next trip!Gateau Chocolat-Myrtille
A chocolate mousse and crunchy praliné cake paired with a special blueberry-orange blossom ice cream.
It has been a while since I last had a good bittersweet chocolate cake, and this absolutely hit the spot! :p
The blueberry-orange blossom ice cream that came with was extremely pleasant and not too sweet.
Though a unique combination, I felt that the taste did not completely complement the cake. :x
Overall, though we paid about $168 for the above dishes for a dinner of 2,
I actually felt that the price was worth it.
With the rise of all the mid-priced food establishments, a $80/pax meal is no longer seen as insane,
and as compared to other similarly-priced restaurants, I would feel DB
provides better service and food.
The only qualm I have now, is that after raising the bar on your taste buds,
how am I going to be able to enjoy mediocre burgers and fries without reminiscing about this meal again?!DB Bistro Moderne
